Last week, a fire damaged Sparky's Subs on Mission Avenue near Spokane Community College and its neighboring restaurant, Que Sabroso.
The fire began in Sparky's Subs and spread to Que Sabroso, which planned to open its doors for the first time on March 1.
Now, both restaurants are closed until further notice. Sparky's has been in business for 30 years and already had insurance, but Que Sabroso was still in the process of securing their insurance plan.
"My inventory is gone. My to-go boxes, my catering equipment, everything is just damaged," said owner of Que Sabroso, Monica Sanders. Sanders, a single mother, worked for over two years to achieve her dream of opening her own Colombian restaurant.
Without insurance, she has to start over from scratch.
